Chicken roll ups are so super easy to make and are a favourite in our house for dinner
Happy Sunday everyone! Yesterday was our 11th wedding anniversary so I got a nice little break from cooking. We visited a quaint little town only an hour and a half south from us called Grand Marais. I finally knocked off an item on my bucket list. We went Kayaking in Lake Superior. It was so beautiful. I’ll post a few pictures soon. But for now I’ve got a great recipe for you that I made the other night.
If you have chicken in the freezer, you’re going to want to pull that out. Right now.
Kids are funny. Actually adults are funny too. When I make a grilled chicken breast and serve it for dinner with the exact same side dishes you see in the picture above, dinner is “boring” only half gets eaten…yadda yadda. But you take that exact same chicken add two ingredients to it, roll it up and suddenly this is “the best ever”. I’m guilty of the same thing…haha. Sometimes it takes just one or two extra ingredients to take dinner from boring to exciting. That’s what we all want from our food right? some excitement. Anyhow, my kids love this recipe and I’m sure you guys will too.
I defrosted the chicken in the microwave a wee bit too much. Oh well. It’s still fine.
You can basically put as much or as little cream cheese inside as you want. I like a lot.
