Our weekends can get pretty busy with hockey practice, hockey games, birthday parties, etc, etc. But, we so look forward to the weekend and totally embrace the chaos. There’s not always enough time to cook healthy home cooked meals so I do what I can to try and come up with short cuts here and there.
This one is a beauty….. Naan Bread! It’s still fairly new to me but it is a traditional East Indian bread that is very much like a flat bread. I find it in my grocery store bakery section and I stock up on it. You can make all sorts of quick meals with it. One of my personal favourites is flatbread pizza. The kids love it with bbq sauce and cheddar cheese (This is one of my faves too). But for the adults I came up with this gourmet pizza with roasted beets, goat cheese, arugula, and a balsamic glaze.
This is so delicious you guys. Especially if you like beets, you have to try this. It looks so fancy and delicious. You’ll look like a pro!

I don’t know about you guys, but with four boys in the house, I am getting getting really sick of fetching snacks every two seconds. Especially in the summer, who feels like being stuck in the kitchen. Boys sure do eat A LOT, and we always seem to be on the go so snack time can be kind of stressful. This pizza snack recipe will cut down your time in the kitchen for when snack time rolls around and fill those hungry bellies. I have even used it for a quick lunch. It’s kind of like a mini pizza except much healthier being homemade.
You can store it in a jar or container in the fridge for up to two weeks. If it doesn’t get gobbled up before that.
There are so many topping variations you guys could try. I have a few more for next time. I’m thinking artichoke, caramelized onion and asiago cheese…yum yum. You can never have too many snack recipes stashed away.
Cut up all the ingredients you plan on using for the pizza mix. I made my own homemade pizza sauce as well. But you can use canned just as well.

Don’t these jars look so easy? My kids are picky so I had to make a couple of batches minus onion and mushrooms.
Pop these babies in the oven and snack time is ready.
